Lorenzo Fauri: ‘Il Giardino offers authentic Italian cuisine with local ingredients, preserving traditional recipes’.

Lorenzo Fauri is the chef in charge of ‘Il Giardino’, the new Italian restaurant at Seaside Palm Beach. With a distinguished career in Michelin-starred kitchens, Chef Fauri is ready to delight guests by recreating the beloved recipes passed down from the women in his family. “I have always been inspired by my grandmothers' and my mother’s cooking,” confesses Lorenzo. 

Hailing from a traditional Italian family in Umbria, Lorenzo grew up surrounded by the sights and smells of the kitchen. “The aromas of cooking always caught my attention, and I was curious to see and experience the whole process.” As a result, there was one thing he knew for sure: “From an early age, I knew I wanted to be a chef and cook for others to enjoy.”

In fact, many of the dishes at ‘Il Giardino’ reflect this heritage. “The 'Gnudi', 'Fettuccine al Ragù Emiliano', and 'Cantucci' are recipes that have been passed down from generation to generation in my family, and now diners can experience them here.” And his favourite? “I would choose the 'Gnudi' first, followed by the 'Tortino allo Yogurt di Capra’.” 

The taste of Italy in every bite  

Each region of Italy has its own culinary identity. The microclimate and traditions shape the variety of ingredients and cooking styles. That’s why, beyond the familiar image of pasta and pizza, Italian food offers a wealth of possibilities. 

In this case, Chef Fauri selects only the finest ingredients to recreate traditional recipes as faithfully as possible, innovating through the presentation of each dish. This approach allows him to create avant-garde cuisine without losing its essence. Lorenzo’s guiding principle is “to work closely with local suppliers to source high-quality, zero-mile products.”

Is there an Italian ingredient you consider essential, one that must always be present in your kitchen?

“Tomatoes and basil are essential ingredients in Italian cuisine. Both are available in every country in the world, which is why at ‘Il Giardino’, we can use local products while still maintaining the tradition and essence of Italian cuisine.”

To illustrate how these ingredients work together to offer the true flavour of Italy, the chef shares a simple staple from his kitchen: tomato sauce. Found in many dishes, it’s made with onion, garlic, celery, carrot, and the best ripe plum tomatoes. “And, of course, you can't leave out the basil,” adds Lorenzo.

Il Giardino di Palm Beach’s Concept 

“‘Il Giardino’ is authentic Italian cuisine, adapted to local ingredients while preserving traditional recipes.” This is how Chef Fauri describes his vision for the new restaurant at Seaside Palm Beach. 

A concept that may sound more traditional than innovative, but it sets ambitious goals. “My vision is to become one of the most renowned Italian restaurants in the Canary Islands, offering diners a unique and unforgettable gastronomic experience,” explains Lorenzo. 

To achieve this, he relies on his team, which he considers one of his greatest motivations. “Working with my team requires effort because they are younger than me and need a mentor to guide and motivate them to deliver excellence to our diners.” 

Perfect pairing: an Italian dish and wine  

As a true Italian, Lorenzo confesses that his favourite dish to prepare is homemade pasta. “It's something that is made from scratch with only two ingredients: flour and eggs, yet it allows for a wide range of shapes and designs,” he explains. “It’s an opportunity to unleash creativity.” 

Naturally, the question arises: What is the secret to perfect al dente pasta? As it turns out, there’s no secret. The key is to set a timer while boiling the pasta. “That way, you can ensure it doesn’t overcook,” says Fauri. 

A local wine is the perfect accompaniment to this traditional Italian dish. “I love full-bodied red wine, like those from Tuscany or Umbria,” he shares. “But it’s true that we have many great wines, so it’s hard to pick just one.”

However, Chef Fauri has a clear favourite: “Prosecco Ferrari would elevate the experience to perfection.” This choice is not only professional, based on his refined palate, but also personal, evoking fond memories. “This wine is closely tied to my father's family, who come from the northern part of Italy,” he adds with a smile.
